Potatoes are the best side dish for any meal. They can be prepared in various ways. If you want to make the most popular potato dish, try baking Idaho potatoes—a side dish named after the U.S. state.
It is widely known because potatoes are grown in those very regions.
The advantage lies in the fact that you skip frying and replace it with baking—this preserves absolutely all the vitamins in the potatoes, and the dish ends up being less high in calories.
This side dish goes well with vegetable stews, fish, and meat. The potatoes turn out fragrant and golden. They are perfectly complemented by a variety of sauces—mushroom, barbecue, cheese, or sour cream.
It’s worth noting that Slavic cuisine has its own version of baked Idaho potatoes, known as “country-style potatoes.” They’re prepared the same way—the potatoes are cut into wedges with the skin on and sprinkled with various seasonings.
You can choose the seasonings yourself, as potatoes go well with turmeric (which gives them a golden color), herbs (parsley, dill, cilantro), all kinds of peppers, and Provençal herbs.

Garlic adds a rich aroma to the dish. Try replacing the salt with soy sauce for a more savory flavor. It also helps create a crispy crust.

Ingredients:
- 1 kg new potatoes;
- 2 tbsp olive oil;
- 2 tbsp soy sauce.
- 4 cloves garlic;
- 1 tsp Dijon mustard;
- 1 tsp Provençal herbs;
Preparation:
- Mix the mustard, soy sauce, oil, and spices. Press the garlic.
- Wash the potatoes thoroughly, removing all dirt from the skin.
- Cut the potatoes into wedges, leaving the skin on.
- Bring water to a boil in a pot. Add the potatoes and cook for 7 minutes. Remove and drain.
- Drizzle the potatoes with the dressing. Place them on parchment paper.
- Bake for 20 minutes at 180°C. Then increase the oven temperature to 200°C and bake for another 10 minutes.

- Cut the potatoes into wedges, leaving the skin on.
- Bring water to a boil in a small pot. Add the potatoes and cook for 7 minutes. Remove and drain.
- Mix the olive oil with the spices, mustard, and salt. Press the garlic.
- Pour this mixture over the potatoes and toss to coat.
- Place the potatoes on parchment paper.
- Bake for 20 minutes at 180°C. Then increase the oven temperature to 200°C and bake for another 10 minutes.

- ½ tsp ground hot pepper;
- 1 tsp tomato paste;
- ½ tsp black pepper;
- 4 tablespoons olive oil;
- a bunch of fresh dill;
- salt.
Preparation:
- Mix the tomato paste with the two types of pepper. Finely chop the dill and add it to the mixture.
- Pour in the olive oil. Season with salt.
- Wash the potatoes thoroughly—scrub off all the dirt with a metal scrubber. Cut the potatoes into wedges, leaving the skin on. Mix with the sauce. Let sit for ten minutes to absorb the flavors.
- Place the potatoes on parchment paper.
- Bake for 20 minutes at about 190°C. Then raise the temperature to 200°C and bake for another 10 minutes.

Bake for 30 minutes in an oven preheated to 180°C. After 30 minutes, increase the temperature to 200°C and cook for another 10 minutes.
